Hico’s Original Texas Steak Cookoff Competition is open to teams of true amateur chefs who believe their steak grilling skills are the best in Texas! There are a limited number of entries available, so register and pay your registration fees early! Competitors will bring their own grills and fuel, we provide the ribeye steaks.
This cash prize is for the team that has the “coolest, most creative and overall best looking cooking space”
Info for Competitors
Choosing Your Steak
Each team will be able to choose two ribeye steaks at the 9:00am cooks meeting (bring your own containers). Cooks may cook only the meat provided by the cookoff. Any cook submitting “outside meat” will be disqualified.
Cooking Fuel
Each cook team may use any type of fuel. (wood, charcoal, propane, etc)
Steak Judging
Steaks will be judged with regard to taste, appearance, texture, and tenderness. The entire field will be judged by five judge’s pre group (total of 3 groups). Each group will identify their top ten and that is how the top 30 are determined. The Top 30 steaks will be judged against each other to pick the winners placing 1st thru 10th. The Top 30 chefs will pick their two steaks for the final round. Competition steaks will be submitted in provided boxes. Any markings on the steaks will disqualify the team.
Safety
Each team is required to have access to a fire extinguisher.
Steak Turn In Time
Turn-in time will be specific, no steaks will be judged if submitted after turn-in time. The turn in times will be announced at the cookers meeting Saturday morning.
Vending
There will be no unauthorized vending from your team cooking space. You may arrange a special agreement for an additional cost.
Location & Set Up
Set up in Historic Downtown Hico, Texas by 9:00am on the day of the event is mandatory. You may set up Friday afternoon after 2:00pm.
Vehicles
All vehicles must be out of the event area by 9am Saturday morning. No ATV’s or golf carts allowed in the event area after 10am except event staff vehicles.
Cook's Meeting
There will be a mandatory cooks meeting at 9am on Saturday in front of the stage. You will not be eligible to cook if you are not at the meeting.
Announcements
All announcements, including the winners will be made at the stage, and all selections will be final. Shelli Stegall is the Chairman for Hico’s Original Texas Steak Cookoff. All questions and decisions will be handled and decided upon by her and Sherry Schane, the backyard chef chairperson. Their decision regarding the competitors and the procedures will be final.

Cookoff Space
Each team will receive a space measuring 20ft x 10ft, along with four Texas Steak Cookoff tickets. If you have a certain space you want, please note it in the comments section of the registration application. Spaces will be assigned on a first come, first served basis.
Entry Fee
An entry fee of $350 per cook team is required to participate in Hico’s Original Texas Steak Cookoff.
